Coming up on Great Day TV, you'll see Andrew Caplinger, owner of Caplinger's Fresh Catch Seafood, whip up his own recipe of lobster bisque, a creamy French soup made from lobster stock. While not sold in his stores, Andrew shares this recipe so you can make it at home!
Lobster bisque ingredients
18 oz tomatoes crushed
1 can tomato paste
2 cups heavy whipping cream
1/2 cup diced celery
1/2 cup diced onion
1/2 cup diced tomatoes
1 tablespoon chopped garlic
1/4 cup pesto sauce
2 tablespoons butter
1 quart seafood stock (lobster stock if available)
1 pound cooked lobster meat
Instructions
Melt butter in a large pot add celery, tomato, onion and garlic. Cook till translucent. Add crushed tomatoes, tomato paste, seafood stock. Bring to a simmer and let cook for 20-30 minutes. Add pesto sauce, heavy whipping cream and lobster. Simmer for 5 minutes. Use immersion blender and blend till smooth.
